Seafood Chowder image

Number Of Ingredients 17

1 cup onion chopped
1/2 cup celery chopped, including some leaves
1 clove garlic minced
2 tablespoons butter
1 (11-ounce) can vegetable juice
1 (8-ounce) can tomato peeled cut up and juice reserved
1 cup water
1 tablespoon tomato paste
2 teaspoons chicken bouillon
2 teaspoons parsley dried
1 1/2 teaspoons basil dried leaves
3/4 teaspoon thyme dried
10 drops hot pepper sauce
1 pound cod filet cut in 1-inch pieces
1 (6 1/2-ounce) can clams minced
1 tablespoon lemon juice
1/4 cup Parmesan cheese Grated

Steps:

  • 1. In a heavy 3-quart saucepan over medium heat, sauté onion, celery, and garlic in butter 5 minutes.2. Stir in vegetable juice cocktail, tomatoes with juice, water, tomato paste, bouillon granules, parsley, basil, thyme, and hot pepper sauce. Bring to a boil and boil 4 minutes.3. Add cod. Bring to a boil reduce heat to low, cover, and simmer 8 minutes or until fish is opaque. Stir in clams with liquid and lemon juice. Heat through.4. Sprinkle Parmesan cheese over each serving.
