SCALLION & BEEF CHEESE BALL image

I had this, for the first time, at a friend's house about thirty years ago. It was amazingly delicious, so of course I asked her for the recipe and was amazed that it only included three ingredients. It's very easy to make and is always a crowd pleaser.

1 bunch(es) scallions, green part only (aka green onions)
1- 2.2 oz. jar(s) dried beef chipped
2- 8 oz. package(s) cream cheese, room temperature

Steps:

  • Rinse and dry scallions; remove white root ends and save for another use.
  • Thinly slice or mince green scallions (I use kitchen shears.) Set aside.
  • Finely mince dried beef (I use kitchen shears.) Set aside.
  • In a mixing bowl, mash cream cheese well with a sturdy fork.
  • Add beef; combine well.
  • Add minced/sliced green scallions; combine very well.
  • Cover and refrigerate for one hour or more, to allow mixture to become firmer before forming into ball (I recommend using food service gloves when forming the cheese ball.) Alternately, you may place the mixture in an appropriately sized bowl and it may be served as a cheese spread, if desired.
  • Cover and refrigerate leftovers.
