Savory Stuffed Pork Chop image

Easy to prepare and always a hit. Makes a great presentation!

Number Of Ingredients 8

8- 8 oz pork loin chops, boneless approx. 1" thick
1 small onion, chopped
1/2 c butter, cubed
5 c fresh baby spinach
1 pkg sage stuffing box mix (6 oz)
1 1/2 c sour cream (12 oz)
1/2 tsp rubbed sage
1/2 tsp lemon-pepper seasoning

Steps:

  • 1. Using a sharp knife, cut a pocket in each pork chop.
  • 2. In a large skillet, saute onion in butter until tender. Add fresh spinach, cook until wilted. Stir in the stuffing mix, sour cream and sage.
  • 3. Fill each chop with about 1/3 cup stuffing mixture; secure with toothpicks if necessary.
  • 4. Place on a greased 15x10 baking pan (lrg casserole dish). Sprinkle with lemon-pepper. Bake, uncovered, at 350 for 35-40 minutes or until a meat thermometer reads 160 degrees.
