- Combine tomatoes, onions, cilantro and pepper; set aside.
- Heat oil in large skillet on medium-high heat. Add fish; cook 3 to 5 min. until browned on bottom. Carefully turn over; top with tomato mixture. Cook 2 to 3 min. or until fish flakes easily with fork.
- Sprinkle with cheese; cover. Let stand 2 min. or until cheese is melted.
