Salmon with Watermelon Salsa image

Grill it or broil it, so Yummy!

Number Of Ingredients 6

1 pound(s) salmon, fresh
1 cup(s) watermelon cut into small pieces with juice
1 medium yellow pepper chopped
1 small sweet onion chopped
2 tablespoon(s) lemon juice, fresh
2 tablespoon(s) mint flakes

Steps:

  • rub fish with olive oil and sprinkle with a mix of parsley flakes, salt, pepper and garlic to taste. Wrap in foil. Grill 15 minutes on each side, more if fish is thick. If flakes, it is done, moist too!
  • Mix remaining ingredients and place in the refrigerator until ready to serve. Serve with brown rice and a crisp romaine salad for a special treat. Salsa is good with most any fish that needs a little extra something!
