SALMON WITH WASABI SAUCE image

1/2 cup light mayo
1/4 cup fresh cilantro
3 tablespoons fresh lime juice (2 limes)
2-3 teaspoons wasabi paste
1 piece (1 1/2 inches long) ginger, peeled and finely chopped
coarse salt and pepper
1 tablespoon vegetable oil
4 skinless (6-8 oz) salmon fillets
1/2 cup mirin
1 tablespoon soy
4 heads baby bok choy (1 1/4 lbs), halved lengthwise

Steps:

  • In blender, combine mayo, cilantro, lime juice, wasabi, ginger and 1 tbl water. Blend until smooth. Add up to 2 tbl more water to thin. Season with salt and pepper, set aside. In large nonstick skillet heat oil over medium high heat. Season salmon with salt and pepper. Place in skillet flat side up. Cook until opaque, 3-4 minutes per side. Transfer to plate, cover with aluminum foil, to keep warm. wipe skillet with paper towel. Add mirin and soy sauce bring to boil over medium-high heat. Add bok choy, season with salt and pepper. Cover, cook until tender when pierced with tip of knife, 3-5 minutes. Discard liquid. Drizzle salmon with wasasbi sauce and service.
