Salmon Salad with Parsley and Capers image

2 tablespoons red-wine vinegar
3 tablespoons chopped capers (rinsed and drained)
2 tablespoons olive oil
1/2 teaspoon coarse salt
Poached Salmon Fillets (recipe follows), flaked
1/2 cup fresh parsley leaves

Steps:

  • In a large bowl, combine onion, vinegar, capers, oil, and salt. Let stand 10 minutes. Add salmon and parsley; toss gently to combine and serve.
