2 lbs lamb (or mutton trimmed and cut into cubes)
1/4 cup onion, chopped
2 tablespoons turmeric
2 garlic cloves, chopped
1 tablespoon hot pepper sauce
2 teaspoons ginger, freshly grated
1/2 cup red wine
1/4 teaspoon cooking oil
1/4 cup tomato ketchup
1 teaspoon curry powder
1/2 teaspoon salt
1 teaspoon vinegar
3 teaspoons chutney

Steps:

  • Season meat with garlic, salt, vinegar and hot pepper. Allow to marinate for about 1 hour.
  • Heat oil, add curry powder, then the meat and brown.
  • Add remaining ingredients.
  • Cover and simmer over low heat 1 to 1 1/2hrs or until meat is tender then adjust seasoning to taste.
  • Serve on a bed of rice.
