RUM SAUCE image

Yield 2 quarts

Number Of Ingredients 5

1 lb unsalted butter, cut into chunks
2 lb dark brown sugar
8 oz water
8 oz dark rum
1 cup raisins (optional)

Steps:

  • 1. Put dark brown sugar into a large sauce pan and pour water around the edge of the pan. Cover and heat on medium high heat until sugar is dissolved and sauce starts to caramelize. 2. Remove from heat, and carefully stir the butter into the sugar mixture. 3. Slowly (the sauce will bubble furiously at first) add the rum and raisins (if using). Once the bubbles subside return to low heat and stir constantly until alcohol has cooked off and the sauce has thickened.
