Rosamarina Salad image

This makes an ambrosia that is a favorite at family gatherings. It has to sit at least overnight and the last ingredients are added 2 hours before serving, hence the long cooking time.

1 lb orzo pasta
2 can(s) chunky pineapple
2 can(s) mandarin oranges
2 eggs
3/4 c sugar
1 Tbsp all purpose flour
10 oz jar maraschino cherries, drained
8 oz frozen whipped topping, thawed

Steps:

  • 1. Cook the pasta according to box directions. Drain, rinse with cool water and drain well.
  • 2. Drain pineapple and oranges, reserving juice. Refrigerate drained fruit.
  • 3. Combine fruit juices, eggs, sugar and flour in a saucepan and bring to a boil, stirring frequently.
  • 4. Add sauce to cooled orzo, mix well. Refrigerate orzo 8-10 hours or overnight.
  • 5. Two hours before serving mix in the reserved fruit, cherries and whipped topping. Refrigerate until serving time.
