ROASTED HERB-STUFFED PORK LOIN image

Number Of Ingredients 6

12 cloves garlic, chopped
3 tbsp rosemary, chopped
4 tbsp sage, chopped
Salt and pepper
18-rib (bout 6 lbs) center-cut pork loin roast
1/4 c. EVOO

Steps:

  • Preheat over to 475. Combine garlic, rosemary, sage, salt and peper in a small bowl. Push the handle of a long wooden spoon through the center end of the roast, boring a hole through the entire roast and to the other end. Remove the spoon and then repeat to widen the hold to about 3/4". Push the herb mixture in to the loin, working from one and and then the other, filling the cavity to the center. Put the pork roast, bone side down into a roasting pan. Pat the roast dry, rub it with olive oil and season with salt and pepper. Roast pork until golden brown (about 30 min). Reduce temp to 350 and roast until 160 degrees (about 1 hr more). Transfer to carving platter, let rest and carve into individual chops.
