Roasted Cauliflower and Brussel Sprouts image

Number Of Ingredients 7

1 head Cauliflower - cut into 1 inch florets
2 cups Brussel Sprouts - cut in half lengthwise
2 tablespoons Olive oil
3 cloves Garlic cloves - large, thinly sliced
1 and 1/2 teaspoon Rosemary - 1 1/2 tsp. fresh or 1/2 tsp. dried, crumbled
3/4 teaspoon Salt
1/4 teaspoon Pepper

Steps:

  • In large bowl, combine cauliflower and brussel sprouts. Drizzle oil on top. Add garlic, rosemary, and pepper. Cover tightly and toss well.
  • Refrigerate overnight
  • Preheat oven to 450. Spread veggies single layer on a large baking sheet with sides. Sprinkle with salt.
  • Roast until veggies are crisp and tender and beginning to brown at edges, 15 - 20 minutes.
