Steps:
- Take the giblets out of the chicken and wash it, inside and out. Pat dry with a paper towel, inside and out. Rub the parsley and rosemary inside the cavity and stuff alternately with the lemon and onion quarters (put the garlic clove in the middle.) If they all don't fit, that's okay. --------- Put in a tight-fitting roasting pan (preferably a Dutch Oven) and sprinkle the Cannellini Beans around the chicken. Pour the wine around the perimeter. Finally, rub the Salt and Pepper around the skin. Cook at 350, covered, until the Chicken reaches 120 degrees (about an hour), and then raise the temperature to 400 and continue to cook until the Chicken reaches 180 degrees. (At this point the skin should be a deep, golden brown. If this hasn't happened, broil it a few minutes.)
