RITA'S LAZY DAISY CAKE 1960 image

This recipe is from the 1960 St. Paul's Church, Cook Book. It is a family favorite, easy to make, with little clean up at the last minute when we just have 'TO EAT CAKE".

Number Of Ingredients 12

2 large eggs
1 cup(s) white granulated sugar
1/2 cup(s) milk on hand; heated to boil
1 tablespoon(s) butter or margarine melted in the hot milk
1 cup(s) sifted flour
1 teaspoon(s) baking powder
1/4 teaspoon(s) salt
COCONUT ICING
9 tablespoon(s) brown sugar
5 tablespoon(s) butter or margarine
5 tablespoon(s) cream or carnation milk
1 cup(s) flaked coconut

Steps:

  • Beat 2 eggs well ADD 1 cup of sugar continue beating, ADD vanilla the hot milk and butter to egg/sugar mixture
  • Sift the dry ingredients together ADD to wet mixture Combine well but DO NOT overbeat.
  • Butter an 8x8 pan Pour mixture into pan BAKE IN A 350 oven 30 minutes or until light brown REMOVE FROM OVEN PUT OVEN TO BROILER
  • ICING: Combine all ingredient and and boil on stove for 3 or 4 minutes POUR over hot cake. RETURN TO OVEN TO BROWN. WATCH CAREFULLY NOT TO BURN THE TOPPING.
