RICOTTA-STUFFED DINNER CREPES image

Number Of Ingredients 12

Crepes:
4 eggs
1 c water
2 c flour
1/4 tsp salt
Filling:
1# ricotta cheese
3 eggs
fresh parsley, chopped
Parmesan cheese, grated
salt and pepper
red sauce and mozzarella to bake

Steps:

  • Shells: Beat together all ingredients. Spread thinly in nonstick pan and cook until set (not browned), flip over very briefly then remove from pan. Fill immediately and put into baking dish or let cool unstacked. Filling: Mix all ingredients until smooth. Fill shells with filling and gently roll, placing in baking dish seam side down on top of shallow sauce in bottom of dish. Cover with small amount of sauce. Sprinkle with grated mozzarella and more Parmesan before baking. Cover pan with foil. Bake at 350 degrees for 30 minutes.
