Rice With Broccoli and Tomatoes image

I have been making this recipe for years and we enjoy it as much today as we did when I first made it 20 years ago!

Number Of Ingredients 8

2 1/2 cups chicken stock
1 cup long-grain rice
1 tablespoon butter
1 teaspoon salt
1 small onion, chopped
1/2 lb fresh broccoli, coarsely chopped
3 tomatoes, chopped
ground black pepper, to taste

Steps:

  • In a saucepan, bring the stock to a boil.
  • Stir in the rice, butter, salt, onion and broccoli.
  • Reduce the heat to medium and cook until the stock is absorbed, about 20 minutes.
  • Stir in the tomatoes and pepper to taste.
