brine
2 cups warm water
2 cups light beer
1/2 cup packed brown sugar
3 Tbs. kosher salt
3 Tbs. olive oil
3 Tbs. fresh lemon juice
2 Tbs. fresh lime juice
1 jumbo size resealable plastic bag
2 racks baby back ribs (about 4 lbs.)
first rub
1/4 cup packed brown sugar
1 Tbs. savory
1 Tbs. granulated garlic
1 Tbs. sweet paprika
1/8 tsp. ground cloves
1 cup yellow mustard
disposable 11x8" baking pan
2 cups wood chips soaked 1 Hr.
vegetable oil
second rub
1/4 cup packed brown sugar
1 tsp. cayenne pepper
1 tsp. dry mustard
Key west bbq sauce
3 cups ketchup
2 cups packed brown sugar
3/4 cup mango juice or nectar
3/4 cup fresh or frozen passion fruit juice blend
3/4 cup orange juice
3/4 cup pineapple juice
1/2 cup golden syrup
1/2 cup fresh lime juice
1/2 cup fresh lemon juice
1/2 cup grapefruit juice
1/4 cup finely grated onion
1 1/2 Tbs. dry mustard
1 1/2 tsp. ground white pepper
1/2 tsp. cayenne pepper
1/2 tsp. kosher salt
1/2 tsp. cumin
2 Tbs plus 2 Tsp. cornstarch

Steps:

  • for brine: stir first 7 ingredients in bowl until sugar and salt dissolve pour into plastic bag add ribs seal and chill overnight, turning occasionally for first rub: mix first 5 ingredients in small bowl to blend remove ribs from brine, pat dry coat with yellow mustard sprinkle brown sugar mix over, let stand at room temp. 1 hr. place disposable baking pan in center of grill or on one side if using a 2 burner grill add enough water to reach 1" preheat bbq over med-low heat on one side of grill (opp.) drain chips place on half of a 12x12" sheet of foil fold over chips, crimp edges poke several holes in top of packet place packet on flame brush grill rack with oil replace place ribs on rack over aluminum pan, meat up cover grill and cook until tender and meat ulls away 1/4" turn and roatate every 1/2 hr. for 1 1/2 hrs. bbq sauce: whisk all together except cornstarch in large heavy saucepan transfer 1/4 cup mix to samll bowl add cornstarch, whisk till dissolved whisk into rest of juice mix cook over med-high until boiling, stir constantly boil 1 min. stir constantly serve warm or room temp. for second rub: mix first 3 ingredients in small bowl to blend place 18x30" of heavy duty foil on work surface top with second sheet transfer ribs to foil meat side up sprinkle top with second rub tent ribs with another sheet of foil, crimp edges return ribs to grill cover grill, cook 15 min. remove top layer of foil close bbq, cook until sugar caramelizes about 15 min. cut slabs between bones serve with sauce
