Rhubarb Bread image

Number Of Ingredients 13

1 1/2 c brown sugar
2/3 c oil
1 egg
1 c buttermilk or sour milk*
2 1/2 c flour
1 tsp baking soda
3/4 tsp salt
1 tsp vanilla
1 c rhubarb, chopped fine
1/2 c black walnuts (optional)
TOPPING
1 Tbsp butter, softened
1/2 c sugar

Steps:

  • 1. Mix all the ingredients except the rhubarb and walnuts. Add them last and pour into 2 greased loaf pans. Sprinkle on top the soft butter and sugar mixture. Bake at 350° for 45 minutes.
  • 2. *To sour milk add 1 teaspoon of plain vinegar or lemon juice to 1 cup of 2% milk and let sit for 10-15 minutes. The milk with curdle slightly.
