This was a favorite of ours growing up.... My mom was a child of the depression and her mom made this when she was a child. Mom often made this to take along on our first night out on a camping trip. It was hot when we left home in mom's heavy Stew pan. Once we were at the camp sight and dad met up with us from work we set up...

Number Of Ingredients 7

1 lb bacon
1 large onion
1 large green bell pepper
4 large potatoes
4 large carrots
1 can(s) tomato soup
1/4 tsp black pepper

Steps:

  • 1. slice bacon into 1 inch strips.
  • 2. chop onion.
  • 3. remove seeds and stem from green bell pepper and chop.
  • 4. Peel and slice carrots into bite size pieces.
  • 5. Peel and cut potatoes into bite size pieces.
  • 6. Fry bacon and remove from pan and drain on paper towels. Rermove all but 2 tbs. of grease.
  • 7. Saute chopped onion and chopped Green Bell Pepper in 2 tbs. of grease until tender.
  • 8. Add can of tomato soup, 1 can water, potatoes, carrots, black pepper and bacon. Cook until carrots and potatoes are tender.
