Red Pepper-Lentil Soup image

2 teaspoons canola oil
1/2 cup chopped onion (1 medium)
4 cloves garlic, finely chopped
1 cup dried lentils, sorted, rinsed
1 can (14 oz) fat-free chicken broth with 33% less sodium
3 cups water
4 oz fully cooked low-fat turkey kielbasa, cut lengthwise in half and cut crosswise into slices (1 cup)
1/2 cup drained roasted red bell peppers, chopped
2 tablespoons chopped fresh basil leaves
1/8 teaspoon pepper

Steps:

  • In 3-quart saucepan, heat oil over medium-high heat. Add onion and garlic; cook until tender. Stir in lentils, broth and water. Heat to boiling. Reduce heat; cover and simmer 15 minutes.
  • Stir in remaining ingredients. Heat to boiling. Reduce heat; cover and simmer 4 to 5 minutes or until lentils are tender.
