Red Pepper and Caper Compote image

During grilling and fishing season, or any time, this makes a great accompaniment to chicken or fish!

Number Of Ingredients 6

1 jar(s) roasted, red pepper (7 1/2 oz jar)
3 Tbsp olive oil
3/4 c sweet onion, chopped
3 Tbsp small capers
1 1/2 tsp brine from capers
salt and black pepper, to taste

Steps:

  • 1. Chop red peppers. Combine with other ingredients. Let stand at room temperature to let flavors meld.
  • 2. Good served over fish or chicken.
