Pumpkin Chocolate Chunk Cookies image

We couldn't wait to try this cookie as soon as it came out of the oven. All the great tastes of fall are in this cookie. It's a fluffy, moist cake-like pumpkin cookie that's full of chocolate chunks. They're not strongly pumpkin spice flavor. Just the spices that are mixed in with the pumpkin pie filling. It's a great balance of flavor. And they're easy to make - a tasty recipe for the family to make together.

1 cup(s) canned pumpkin pie filling
1 cup(s) sugar
1/2 cup(s) canola oil
1 - egg
2 cup(s) all-purpose flour
2 teaspoon(s) baking powder
1 cup(s) semi-sweet chocolate chunks
1 teaspoon(s) baking soda dissolved in 1 tsp milk
1 teaspoon(s) cinnamon
1 teaspoon(s) vanilla extract
1/2 teaspoon(s) salt

Steps:

  • Beat together the pumpkin pie mix, egg, vanilla, and oil.
  • Beat in the sugar.
  • Add flour, baking powder, dissolved baking soda, salt, and cinnamon. Mix well.
  • Fold in chocolate chunks.
  • Drop cookies onto lightly greased cookie sheet.
  • Bake 10-12 minutes at 375 degrees.
