I had this at a recipe club a few years back and it was YUMMY GOOD! Goes great with filet mignon. I made it for a large family holiday gathering and they have requested it again this year. Number Of Ingredients 8

1/2 c chopped onion or use french fried onions
1 pt sour cream
1 can(s) condensed cream of chicken soup (or any soup you like)
2 c shredded cheddar cheese (or any cheese you like)
2 lb shredded potatoes or hash browns, frozen (thawed), refrigerated or fresh
salt and pepper to taste
2 c crushed potato chips (can use corn flakes, or french fried onions or whatever you like)
1/2 c butter, melted (more or less you if like)

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. In a large mixing bowl combine the onion, sour cream, soup, cheese, salt and pepper. Note: If the potatoes are watery, press out the water. Add potatoes to the soup mixture.
  • 3. Transfer to 9 by 12 pan Sprinkle potato chips on top and drizzle with butter. Bake for 45 to 60 minutes until golden brown.
