POTATO AND CARROT AU GRATIN image

Number Of Ingredients 6

2 1/4 lb baking potatoes, peeled, thinly sliced
1 1/4 lb large carrots, peeled, thinly sliced
1 tsp salt
6 oz Comte or Gruyere cheese, grated
1 c chicken stock or canned broth
1/4 c (1/2 stick) unsalted butter

Steps:

  • Position rack in top 1/3 of oven and preheat to 375 degrees. Butter a 9"x13"x2" glass baking dish. boil potatoes and carrots 5 minutes. Drain well. Layer vegetables, salt, and cheese. Pour stock over vegetables. Dot top with 1/4 cup butter. Cover and bake about 1 hour. Uncover and bake 10 more minutes until top is golden. Let stand 10 minutes before serving.
