PORK CHOPS W/ BLUE CHEES APPLEJACK GRAVY image

8 sices bacon chopped
2 large onions thinly sliced
2 granny smith apples, peeled, cored and cut into wedges
1T sugar
2T flour
1Cup apple juice
1C chicken broth
1/2C applejack or brandy
1C crumbed blue cheese
4 6-oz pork loin chops about 1/4 inch thick

Steps:

  • Cook bacon until crisp, remove and drain. Keep drippings in skillet. Add onions and saute 15 minutes. Push to one side, add apples and sugar and saute apples about 20 minutes. Transfer mixture to bowl. Heat 1T bacon drippings or oil in same pan. Add four ad stir 1 min. Whisk in juice, brth, and applejack. Boil until gravey thickens, 4 minutes. Add cheese and whisk until melted. Add onions and apples stir until warm and remove from het. Salt & pepper pork. COok over medium/high heat 6 min per side (strzempko women don't tell your men how long you cooked it). Pour apple/onion gravey over pork chops and serve.
