Popeyes Cajun Rice image

I have never tried this recipe, or eaten this since spicy foods are a no no for me. However, I have family and friends who love this.

1 lb. lean ground beef
1/3 cup diced green onions (scallions)
1/2 cup finely diced green bell pepper
1/2 tsp. garlic powder
1/2 tsp. celery flakes
1 tsp. cajun seasoning
1/4 tsp. red pepper flakes
4 cups cooked long grain rice
1/4 to 1/3 cup water
1/4 tsp. black pepper

Steps:

  • 1. In skillet combine ground beef, green pepper and cook over medium-high heat until the beef loses its pink color and the pepper is soft. Pour off excess fat and reduce the heat to medium-low. Add remaining ingredients, stir and cook together until ground beef is completely cooked and liquid is absorbed, 25 to 30 minutes. For a more serious bayou experience, add more Cajun seasoning and red pepper flakes. Use a good quality rice for this recipe. The Popeyes story began in Arabi, Louisiana in 1972, with Al Copelands Chicken on the Run restaurant. Mild-tasting chicken just didn't have that Cajun spice that Louisiana is known for. So, Copeland "turned up the heat" on his chicken recipe and changed the name to Popeyes. This spicier chicken was what the public wanted, and business began to boom. Perking up his chicken did the trick.
