Steps:
- Preheat oven to 350F. Lightly grease 2 loaf pans (9×5"); set aside.
- In a bowl, beat eggs until frothy; beat in sugar, oil & vanilla until thick & foamy. Stir in zucchini & pineapple. In another bowl, mix flour, soda, salt, baking powder, cinnamon & nutmeg; add to zucchini-pineapple mixture & stir until just moistened. Fold in walnuts.
- Bake for 40-50 minutes; checking at 40. Makes 2 loaves.
