Pineapple Coconut Pie image

Found the recipe on the recipe but make lighter for Diabetic person.

Number Of Ingredients 6

1 c cold milk or non-fat milk
1 pkg instant vanilla pudding or sugar-free mix
1/2 c flaked coconut
1 can(s) (8oz) unseetened crushed pineapple, drained
1 (9inches) pastry or graham pie shell
1 tub of cool whip or light cool whip

Steps:

  • 1. In a large bow, whisk milk and pudding mix for 2 minutes. Let sit for 2 minutes or until thickened. Stir in coconut and pineapple. Pour into baked pastry or graham shell. Chill for at least 2 hours. Garnish with whipped topping. Yield: 8 servings.
