PIEROGI AND KIELBASA BAKE image

1 Tbsp Olive oil
7 oz Kielbasa
1 onion Sliced
1 16 oz package frozen potato and onion Pierogies
1/4 red cabbage cored and sliced
1/2 cup hard or regular apple cider
1/2 cup sauerkraut, drained
2 Tbsp whole grain mustard
1 1/2 cups sharp cheddar

Steps:

  • Heat oven to 450 Bring pot of water to boil Heat oil in a large skillet over medium heat add kielbasa and cook until browned on one side, about 3 mins. stir in the onion and cook, covered, stirring occasionally until tender, about 6-7 mins. While onion is cooking boil pierogies according to package directions, drain. Add cabbage and cider to onions, cook tossing occasionally until beginning to soften about 4 mins, stir in the sauerkraut and mustard. Arrange 1/3 of pierogies on the bottom of a 8x8 baking dish, top with 1/3 of cabbage mixture and 1/2 cup cheese. repeat twice. Bake until cheese melts, 8-10 mins.
