Pepper Hash image

My grandmother made this casserole for her family, 4 boys and 2 daughters, during the hard times of the 1930's and 1940's. The taste is wonderful, even if it is a budget stretcher. I think you will like it. Everytime I make it, it takes me back to visiting her and being loved by her. She was my BFF and I miss her.

1 lb ground beef or ground pork
1 medium diced sweet onion
1 medium diced bell pepper
8 oz pasta, penne or your favorite. my grandmother used spaghetti because i think back in the 30's and 40's they didn't sell the wide variety of noodles they do now, commercially
1 can(s) tomato soup
1 c parmesean cheese

Steps:

  • 1. Brown 1 pound of ground beef, crumbled, then drain and rinse if you wish. Next saute 1 medium diced onion, 1 diced green pepper, and 6-8 large sliced mushrooms (optional), until done. Cook 8 oz. penne noodles, or any type of noodle your family prefers, to al dente. Mix noodles, ground beef and vegetalbes together and put in casserole dish (I use a old skillet). Mix 1 can of tomatoe soup with 3/4 cut water and make a sauce. Pour over the noodles evenly, then top casserole with 1 cup of pamesean cheese (I use fresh grated, but it is pricey). Bake in 350 oven for 30 minutes.
