Pecan Pie by Nancy's Mom image

This is probably the best pecan pie I've ever had. It's the old fashioned kind. My friend Nancy's Mother brought this pie to a social one evening. I was following her around like a puppy begging for the recipe. She said there was not one...but she would write down how she makes it. This was years ago and both Nancy and her Mom have passed away, and I still have the piece of paper she wrote it on. You see it here. I treasure this. And I still make this pie.

3 - eggs, slightly beaten
1 cup(s) sugar
1/2 teaspoon(s) salt
1 cup(s) white corn syrup
1/3 cup(s) oleo (i use butter ok so call me paula)
1 cup(s) pecans coarsly chopped
1 teaspoon(s) vanilla extract

Steps:

  • Beat 3 eggs slightly, stir in 1 cup sugar and 1/2 teaspoon salt until dissolved. Stir in 1 cup of white corn syrup and 1/3 cup oleo melted. Mix thoroughly. Stir in 1 cup of pecans and 1 teaspoon vanilla. Pour in a deep pie shell and bake 350 degrees for 45 - 55 minutes until center is set.
