Peanut Butter Cake image

I remember terrific peanut butter cakes from my childhood...and this one ranks right up there with them!

1 c peanut butter, creamy
2 c sugar
1 tsp vanilla
2 c all purpose flour, sifted
1/4 c shortening
3 eggs
1 c milk
1 Tbsp baking powder
FROSTING
2 c sugar
1 c milk
18 oz peanut butter
1 tsp vanilla

Steps:

  • 1. Cream peanut butter, shortening and sugar.
  • 2. Add eggs and vanilla. Mix well.
  • 3. Alternate sifted flour with baking powder and milk
  • 4. Pour into greased 9x13 pan. (I typically spray with Pam) Bake at 350 degrees until done (start testing with toothpick at 25 min)
  • 5. FROSTING: Cook milk and sugar to soft ball stage; add vanilla; add peanut butter; stir to spreading consistency. Beat until it starts to lose its gloss. If too thick, add a little milk 1 T. at a time. If too thin, add peanut butter. Spread on cooled cake. (this is a fudge type frosting and is as thick as the picture shows)
