Parmesan Truffle Potato Chips image

Love me some Parmesan Truffle potato chips

1 1/2 lb small red potatoes peeled
vegetable oil for deep frying
salt
1 c freshly parmigiano-reggiano cheese
2 Tbsp black truffle oil

Steps:

  • 1. use a mandolin to slice the potatoes very thin. Soak them in cool water for 30 minutes. Drain and dry completely.
  • 2. Heat the oil to 360 degrees. Deep fry the potatoes for 3 to 5 minutes until golden brown. Drain on paper towels. Season with salt. Transfer the potatoes to a bowl
  • 3. Toss with the truffle oil and cheese. Serve immediately
