PAN SEARED TILAPIA W/CHILE LIME BUTTER image

Number Of Ingredients 11

1/2 stick butter softened
1 tbls finely chopped shallot
1 tsp finely grated fresh lime zest
2 tsp fresh lime juice
1 tsp sriracha sauce or serano chiles
1/2 tsp salt
flour
2 tbls old bay seasoning
1 tsp creole seasoning
1/2 tsp garlic powder
olive oil

Steps:

  • Make Chile Lime Butter: Stir together butter, shallot, zest, lime juice, sriracha sauce and salt in bowl. Prepare Fish: Mix old bay/creole/garlic powder with flour. Clean fish, dry off water, sprinkle with black pepper and put fish into flour and turn to coat both sides. Heat 2 tbls oil in a skillet over moderately high heat until just smoking, then saute 3 pieces of fish, turning over once with spatula, until golden brown and just cooked through, 4-5 minutes and transfer to plate. Serve with dollop of chile lime butter.
