PAN-FRIED OYSTERS AND TARTAR SAUCE image

Number Of Ingredients 16

1/2 c. all purpose flour
1/2 c. Italian seasoned bread crumbs
2 T. chopped, dried parsley
1/4 t. Old Bay seasoning (optional)
3-4 cloves of garlic, minced
2 dozen fresh shucked oysters
2 T. olive oil
2 T. butter
2 cloves of garlic, quartered
For tartar sauce:
1/2 c. mayo
1/4 c. dill relish
1 1/2 t. dried parsley
1 1/2 t. lemon juice
1/2 t. dried minced or flaked onion (can also use fresh minced shallot)
1/8 t. worcestershire sauce

Steps:

  • Mix the tartar sauce ahead of time and refrigerate. For the oyster breading,mix together the bread crumbs, flour, parsley, and minced garlic (and Old Bay). Dredge the oysters in the flour mixture. Set aside on waxed paper for 3-5 minutes. Heat oil and butter in a large fry pan. Saute the quartered garlic cloves in the butter until softened. Remove. Add oysters to pan and cook until brown, about 45 seconds per side. Serve with tartar sauce or fresh lemon if you want a lower fat option. Also good with your favorite hot sauce.
