Oyster Casserole image

1 qt oyster meat, rinsed and drained well
1/3 c olive oil
2 clove garlic, finely minced
1/3 c fresh parsley, chopped
2 c italian breadcrumbs (i make my own)
1/4 c lime or lemon juice
6 spring onions, sliced, white and green
1/3 c parmesan cheese, grated

Steps:

  • 1. Preheat your oven to 200 C (400 F). Grease a 9x13 baking dish with butter.
  • 2. Here is the oyster meat, in brine, from local fishermen, and they deliver as well. Each bag has 2 cups of oyster meat, drained.
  • 3. In a mixing bowl, add the olive oil, garlic, parsley, breadcrumbs, and lime or lemon juice, mix together.
  • 4. Add the oysters to the dish and spread out to an even layer.
  • 5. Spread the breadcrumb mixture evenly over the oysters.
  • 6. Sprinkle on the cheese.
  • 7. Sprinkle on the spring onion.
  • 8. Bake for 25-30 minutes or until the topping browned.
  • 9. Serve with a side or two of your choice. Enjoy.
