Steps:
- Heat oven to 275 degrees. Line two 8 1/2" x 4 1/2" loaf pans with heavy wrapping paper. Do not substitute aluminum foil, fruit will burn. Mix lard, sugar, eggs, molasses, orange peel, and honey if using. Beat with mixer 2 minutes. Sift 2 cups flour, baking powder, salt and spices together and stir into lard mixture. Fold in brandy. Mix 1 cup flour into fruit and nuts. Pour batter over fruit; mix well. Pour into prepared pans. Bake 2 1/2 to 3 hours. Cover with foil if browning too quickly. Let stand 15 minutes before removing from pans. Do not remove paper. Wrap in foil. Store in cool place. Brush with brandy two or three times before serving. Can also make 24 muffins sized cakes or four 4 1/2 x 2 1/2 " loafs. Use cupcake liners with muffin tins and bake 45 to 60 minutes. Bake mini loafs 1 1/2 to 1 3/4 hours.
