Oh Boy Waffles image

Really great recipe for both waffles and pancakes. Very helpful to use the Tupperware large and small Mix & Stores (or any other mixing bowl with a handle and a pouring spout).

Number Of Ingredients 7

2 1/2 cups flour
4 teaspoons baking powder
3/4 teaspoon salt
2 tablespoons sugar
2 eggs
2 1/4 cups milk or 2 1/4 cups combination of milk and water
3 tablespoons melted shortening, bacon drippings or 3 tablespoons vegetable oil

Steps:

  • In a large bowl, preferably one with a handle and a pouring spout, mix together the first four ingredients. I use a whisk.
  • In a separate, smaller bowl, again with a handle and a pouring spout if it's available, beat the two eggs into the milk or milk and water combination, then add and mix in the melted shortening, bacon drippings or vegetable oil.
  • Pour the wet ingredients into the dry ingredients and mix with a firm whisk, just until combined. Mixture will be lumpy.
  • Pour onto heated nonstick waffle iron or griddle. Serve hot, or re-heat leftover waffles in a toaster.
