No Nut Baked Granola image

My husband is allergic to nuts, so I developed a granola recipe that's easy and nut-free. Store in an airtight container in the fridge.

4 cups rolled oats
⅔ cup honey
½ cup wheat germ
2 teaspoons unsweetened cocoa powder
2 teaspoons ground cinnamon
1 teaspoon vanilla extract
1 cup unsweetened flaked coconut
½ cup chopped dried fruit

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • Combine oats, honey, wheat germ, cocoa powder, cinnamon, and vanilla extract in a large bowl. Spread oat mixture on a large rimmed baking sheet.
  • Bake in the preheated oven, turning once, until lightly toasted, about 20 minutes. Stir in coconut and dried fruit.
  • Continue baking until coconut is lightly toasted, about 10 minutes. Cool completely before transferring to an airtight container, about 15 minutes.
