Nathalie Dupree's Meat Loaf image

This has been my favorite meat loaf recipe for years. It's from Nathalie Dupree's cookbook "New Southern Cooking" which I got from my mom many years ago. It is a great reading cookbook, but this is my favorite recipe out of the whole book. She says: "Here's my mother's time-honored meat loaf recipe." Serve it hot with mashed potatoes and English peas, or cold for sandwiches." The sauce is a bit different than the typical plain tomato or catsup on top, but I love it! Number Of Ingredients 16

2 1/2 lbs ground beef
1 1/4 lbs ground pork
2 slices bread, made into crumbs
1/3 cup oatmeal
4 eggs, beaten
2 teaspoons salt
1 tablespoon prepared mustard
1 cup tomato sauce
1 medium onion, chopped
1 (5 ounce) can evaporated milk
freshly ground black pepper, to taste
4 tablespoons brown sugar
1 cup tomato sauce
1/2 cup milk
4 tablespoons prepared mustard
4 tablespoons vinegar

Steps:

  • Preheat the oven to 400 degrees. For the loaf, mix all the ingredients together, shape, and place in a greased roasting pan. Bake for 1 hour, basting occasionally with the pan juices (I leave this part out).
  • To make the suace, mix all the ingredients together in a small saucepan. Heat briefly and pour over individual slices of the meat loaf.
