Mushroom Stroganoff image

There was a brief time when my daughter was unable to eat meat. I had to keep coming up with ideas for her dinner. This was one of them. (Internet photo)

Number Of Ingredients 8

3 tablespoon(s) olive oil
1 pound(s) fresh mushrooms, sliced-try to use at least 3 varieties
3 - scallions, sliced
2 clove(s) garlic, crushed
2 tablespoon(s) dry white wine
1 1/4 cup(s) sour cream
1 tablespoon(s) fresh tarragon, chopped
- parsley for garnish

Steps:

  • Heat oil in a large frying pan and fry the mushrooms gently, stirring from time to time until they are softened and just cooked.
  • Add scallions, garlic, wine and cook for 1 minute more. Season well with salt and pepper.
  • Stir in sour cream and heat but do not boil. Stir in tarragon. Garnish with parsley. Serve with rice, noodles or potatoes.
