Mom's Ham & Beans image

Mom would cook this all day and the aroma was so wonderful when we came into the house after work. She also had home made bread, hot out of the bread machine. Of course the bread would make any house smell good, but the experience of a hot meal after working out in the cold weather all day would make any one leap for JOY.

PREPARE BEANS: ONE POUND OF DRY BEANS (PINTO) = 2 CUPS DRY /OR 5 TO 6 CUPS COOKED
2 1/2 c pinto beans, dried
ham bone
ham, cubed
onion, chopped
pepper

Steps:

  • 1. Prep Beans: Wash and clean beans. Fill pot 1/2 full of water and add beans. Bring to a boil and boil for 2 minutes. Remove from heat and let stand for 1 to 4 hours. Dump out water and drain beans.
  • 2. Add ham bone to large pot. Cover with fresh water and bring to a boil. Simmer until meat falls off bone. Remove bone and skim off fat. Add drained beans, ham cubes and chopped onion. Bring to a boil and simmer for a few hours until beans are tender. You can add more or less ham/beans to desired pot size. Salt and pepper to taste. Serve with homemade bread. If you do not have a ham bone, just use left over ham and dripping from the bottom of the baking dish and skip the ham bone part.
