Mom's blueberry cake image

You will love this receipt. My mom always made this for the family. Great as muffins or made in a cake pan. Either way delicious

Number Of Ingredients 10

1 3/4 cup(s) (plus 2 tsp) sugar
1 teaspoon(s) cinnamon
1/2 cup(s) (plus 2 tbsp) shortening
2 large eggs
3 cup(s) flour
2 1/2 teaspoon(s) baking powder
1 tablespoon(s) salt
1 1/4 cup(s) milk
1 1/2 tablespoon(s) vanilla
2 cup(s) frozen blueberries

Steps:

  • Cream sugar & shortening in large bowl with mixer at low speed. Beat in eggs until fluffy. In seperate bowl combine flour, baking powder, cinn. & salt. Set aside 1/4 cup of flour mixture to coat blueberries later. Pour milk into a measuring cup & stir in the vanilla. W/mixer at medium speed, add flour mixture to shortening mixture alternately w/milk until blended. Toss blueberies in 1/2 cup flour mixture. Fold in blueberries along with any remaining flour. Pour batter into greased and floured pan. Sprinkle top with cinn.& sugar. Bake at 375 for 45-60 min. for cake. 30 min. for 12 large muffins
