Mock Caprese Salad image

Fresh mozzarella is expensive. I love caprese and came up with this. I use fat-free cottage cheese to make it really low calorie.

1 cup fat-free cottage cheese
2 tomatoes, chopped
1 tablespoon chopped fresh basil leaves, or to taste
½ teaspoon salt
freshly ground black pepper to taste
2 tablespoons balsamic vinegar

Steps:

  • Combine cottage cheese, tomatoes, basil, salt, and black pepper in a bowl. Stir in balsamic vinegar.
