MICROWAVE PINEAPPLE UPSIDE DOWN CAKE image

2 TB butter
1/2 cup packed light brown sugar
6 slices canned pineapple (juice packed) (reserve 1/3 cup of the juice)
6 marachino cherries
(18.5 oz) yellow cake mix
water
egg
oil

Steps:

  • In a glass 8 inch round cake dish, melt butter for 30 seconds in microwave. Add brown sugar, stir to mix, then cook in microwave at 70 percent power for about 2 minutes, careful not to burn sugar. Arrange the pineapple slices and cherries in the center of the rings. Prepare the cake mix per the package directions, using reserved juice as part of the liquid. Reserve half the batter for another cake or cupcakes. Fill the round dish with the other half of the batter, cover with a paper towel and cook in microwave at 70% power 9-11 minutes, or until a toothpick comes out clean. Turn cake half way through baking if no turntable in unit. Invert immediately onto a plate
