MEDITERRANEAN BAKED FETA WITH TOMATOES image

Number Of Ingredients 10

1 cup petite cherry tomatoes, multi colored - cut in half
1 cup sliced black and green olives
1 Tablespoon capers
1/4 cup thinly sliced red onion
1 clove garlic - minced
1 tablespoons finely-chopped fresh flat-leaf parsley
1 teaspoon dried oregano
1 teaspoon olive oil
Freshly ground black pepper to taste
1 8 to 10 ounce block feta

Steps:

  • 1. Heat grill to medium-high 2. In a bowl, mix the tomatoes, olives, onion, garlic, parsley, oregano, olive oil, and pepper. 3. Set the feta block in the middle of a piece of foil (or a small foil pan). Pile the tomato mixture on top of the feta. Fold up the edges of the foil so that it will hold in all liquid as mixture cooks. 4. Place the packet on the grill for 15 to 20 minutes to warm it through. 5. Serve with crostini, crackers, flatbread, pita chips for piling and heaping and dipping. Cooks Note: May be made in oven. Heat oven to 400 degrees - can be made in a small covered casserole dish. Both methods: The feta does not melt, just warms and softens. Garnish with additional chopped parsley and serve and eat immediately. As it cools, the feta will firm up again. The dish could be returned to the oven to soften the feta again or for leftovers.
