Marinade Essentials: Magic with Poultry image

Poultry can be a bit on the bland side... but not with these awesome marinades on your side. These are my go-to marinades when I'm looking to spice up some chicken. Use them on breasts, thighs, legs... whatever your pleasure.... Bone in, bone out, skin on, skin off... it doesn't matter. Choose your marinade, and have some fun. So, you ready... Let's get into the kitchen.

GIVE IT TO ME STRAIGHT
1/4 cup(s) kosher salt
1 quart(s) filtered water
KICKING HOT/HONEY
3 tablespoon(s) olive oil, extra virgin variety
1/4 teaspoon(s) salt, kosher variety
1/2 teaspoon(s) white pepper, freshly ground
2 clove(s) garlic, minced
4 tablespoon(s) fresh clover honey
2 tablespoon(s) chopped chipotles and adobe sauce (canned)
MY ITALIAN ANCESTRY
4 tablespoon(s) olive oil, extra virgin variety
2 tablespoon(s) lemon juice, freshly squeezed
1 pinch(es) salt, kosher variety
1/4 teaspoon(s) black pepper, freshly ground
3 clove(s) garlic, minced
1 teaspoon(s) dried oregano
1 teaspoon(s) dried marjoram
1 teaspoon(s) dried thyme
1/2 teaspoon(s) dried basil
1/2 teaspoon(s) dried rosemary
1/2 teaspoon(s) dried sage
A SOUTHERNER'S DELIGHT
3 tablespoon(s) olive oil, extra virgin variety
1/4 teaspoon(s) salt, kosher variety
1/4 teaspoon(s) black pepper, freshly ground
2 tablespoon(s) lime juice, freshly squeezed
1 tablespoon(s) chili powder, mild or hot, your choice
1/2 teaspoon(s) ground cumin
4 tablespoon(s) fresh cilantro, chopped
A HINT OF THE EAST
4 tablespoon(s) olive oil, extra virgin
1/8 teaspoon(s) salt, kosher variety
1/4 teaspoon(s) white pepper, freshly ground
2 clove(s) garlic, minced
1/4 cup(s) coconut sugar
1/4 cup(s) tamari sauce

Steps:

  • The one exception to a marinade is the first one... that technically is a brine. Brining chicken can make it really juicy, and works in many recipes.
  • For the marinades, mix all the ingredients together and place into a bowl or Ziplock bag, add the chicken and refrigerate for a few hours or overnight. The exception to this is the brine... chicken should only be brined for 2 or 3 hours.
  • Keep the faith, and keep cooking.
