Mandarin Turmeric Rice image

I don't usually like mixing fruit with savoury dishes but this recipe caught my eye, it's even simpler to do if you throw the rice & turmeric in the rice cooker and then stir through the remaining ingredients at the keep warm stage..

Number Of Ingredients 6

8 cups water
1/2 teaspoon turmeric
1 cup rice
3 shallots, chopped
310 g canned mandarin segments, drained
1/4 cup cashew nuts, roasted

Steps:

  • Boil water & add turmeric & rice, boil until rice is tender.
  • Drain the rice & gently stir in remaining ingredients.
