Make Ahead Mashed Potatoes image

These are the best potatoes we have ever had! Perfect to eat right away, or save up to 3 days then bake.

Number Of Ingredients 7

8 large potatoes
1 medium onion
1/2 cup(s) butter
8 ounce(s) cream cheese, low-fat
1/2 cup(s) sour cream, lite
1 large egg, beaten
- salt and pepper to taste

Steps:

  • Boil potatoes with chopped onions until tender, about 10 minutes. Drain & mash while hot.
  • Add butter, cream cheese, sour cream to potatoes and mix.
  • Add a spoon of hot potato mixture to beaten egg, stir, and then add to entire potato mixture. (This tempers the egg.)
  • Salt and pepper to taste. Eat, or save until later. Bake at 350 degrees for 30 - 35 minutes. Keeps up to 2 or 3 days.
