MAC NUT MAHI MANI WITH HAWAII FRUIT SAUCE image

Number Of Ingredients 15

1 cup macadamia nuts, finely chopped
12-14 ounce piece of Mahi-Mahi, skinless, cut into 2 serving pieces
1 teaspoon sea salt
1 teaspoon freshly cracked peppercorns
1 1/2 Tablespoons fresh lemon juice
1/3 cup unbleached white flour
1 Tablespoon extra-virgin olive oil
1 Tablespoon unsalted butter
Sauce
3 Tablespoons unsalted butter
3 Tablespoons banana liqueur
2 Tablespoons Robola wine
2 Tablespoons pineapple preserves
1/2 mango, small dice
1/2 banana, cut into 1/2 inch thick pieces

Steps:

  • 1. Finely chop nuts and put onto a metal tray under the broiler for 2 minutes or until slightly browned. Stir halfway and watch carefully. Set aside. Turn off broiler and preheat oven to 350 degrees F. 2. Prepare fish, wash and dry thoroughly, sprinkle with salt and pepper. Dip in lemon juice, then in flour. 3. Heat olive oil and 1 Tablespoon butter over medium high heat in an oven-proof sautee pan until the butter begins to sizzle; add fish and saute 2 minutes. 4. Turn fish and press prepared nuts on this side of the fish; put in the oven to finish, baking 5-6 minutes or until flaky. 5. Meanwhile prepare the sauce. Melt the 3 Tablespoons butter in a sauce pan over medium heat; add the liqueur and wine, then add preserves. Stir, reduce slightly. Set aside and stir in mango and banana. 6. Plate fish; one serving per person and drizzle with sauce.
